Brown butter walnut fudge brownies with a chocolate crackle cookie cap made entirely from scratch? No shortcuts? No box mix? Yup! This video is the full length tutorial showing you every step, in great detail, so you have all of the information you need to get it right!
This brownie started as a ridiculous idea: a THICK crackly topped, deeply flavored, fudgy, old-school brownie with the kind of texture that several professional bakers told me could not be achieved. After months of planning comparing methods, and careful consideration for that magical thin crisp cookie cap, I think I might have found the one formula that actually solves the fudge to cake balance and gets it right. This is the brownie recipe I finally decided upon, but until this video, I had never made it before. So, I agreed to try it out on camera and publish it to YouTube, regardless of the outcome.
I’ve ditched the paper-thin crackle top, the overly dense chocolate center, and have built a brand new brownie from the ground up using super-charged brown butter, dark and bittersweet chocolate, Dutch Processed Cocoa, and toasted Walnuts. You have to see it to believe it, because some people say it is impossible.
