For owner and founder of CÔNG TỬ BỘT, Vien Dobui, it all comes down to noodles—specifically, his uncle’s noodle bowl. When the news came down that his uncle was thinking of retiring, Dobui flew back to Vietnam to learn the art of making noodles, eventually bringing it back to Portland, Maine. It’s a testament to how food and the taste of home can transcend borders and time, bridging both the past and future.
