When you think Italian food, pizza and pasta bolognese might come to mind. But in the Italian Alps of Livigno, Olympians and fans are crazy over Pizzoccheri. A calorie-dense dish made with buckwheat, local cheese, cabbage and potatoes, it is fueling athletes today as it has the people of the Valtellina valley for centuries.
Livigno is a remote mountain town. With access to the town difficult years ago, the long shelf-life of buckwheat made the dish both nutritious and practical year round, Marika Gurini, co-owner of Hotel Margherita, told Reuters. Chef Nenad Vukicevic says it’s the most popular dish on their restaurant’s menu. Gavino Garay gets a first-hand look at how it’s made.
