Easy and delicious apple hand pies Ingredients: 1 tbsp salted butter 2 large Honeycrisp apples, diced ⅓ cup brown sugar 1 tbsp cinnamon, plus more for topping 1 tbsp lemon juice 1 tsp cornstarch + 1 tsp water, whisked together to make a slurry 1 refrigerated pie crust 1 large egg, beaten Granulated sugar, for topping Preparation: 1. Preheat oven to 400ºF. In a skillet placed over medium heat, melt the butter, then add the diced apples, brown sugar, cinnamon, and lemon juice. Cover and let cook 3–5 minutes or until the apples have softened. Add the cornstarch slurry and mix until thickened. 2. Roll out the pie dough and cut into rectangles — 4 to make 2 large pies, and 8 to make 4 smaller pies. Add the apple mixture to the center of half the pie dough rectangles, top with the remaining dough pieces, and crimp the edges to seal. Cut a few slits into the top of each hand pie to allow steam to escape while they bake. Use any off-cuts from the dough to make cute designs. Brush the pie dough all over with your beaten egg. Sprinkle with remaining cinnamon and sugar, to taste. 3. Lay the hand pies on a parchment-lined baking sheet. Bake for 30 minutes or until the dough is golden brown. Let cool for 10 minutes before serving.
