Claire Saffitz brings a fresh spin to a fall classic with this Apple Cheddar Pie, featuring a flaky, buttery cheddar crust and caramelized apple filling that’s perfect for Thanksgiving 2025 or any holiday dessert table.
In this video, Claire walks through her signature pie dough – made with aged cheddar cheese, all-purpose flour, and cold butter – before layering in a macerated mix of Honeycrisp and Granny Smith apples, demerara sugar, vanilla extract, and a hint of bitters and cider vinegar for balance.
The result? A golden, savory-sweet pie that’s crisp on the outside, tender in the middle, and unlike any apple pie you’ve had before.

Apple Cheddar Pie
Ingredients:
CRUST
4 ounces aged cheddar cheese, grated
3 cups all-purpose flour (14.2 oz / 405g), plus more for rolling
2 tablespoons sugar
2 teaspoons Diamond Crystal kosher salt
2 sticks unsalted butter, cubed and briefly frozen
⅔ cup ice water

FILLING
3 pounds apples (about 7 medium-large), peeled, cored, and cut into ½-inch-thick wedges
⅔ cup demerara sugar
2 teaspoons orange or Angostura bitters (optional)
2 teaspoons apple cider vinegar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
Pinch of kosher salt
⅔ cup heavy cream
2 tablespoons cornstarch

ASSEMBLY
1 beaten egg
Splash of heavy cream
Demerara sugar for sprinkling
