I tried 100 month old Parmigiano from Italy.

I was in Italy when I saw a block of Parmigiano-Reggiano that was over 100 months old. At that point, I had one question: what does that even taste like? To find out, I didn’t just try the 100-month—I also bought 24, 40, and 60-month Parm too, and compared them all side by side to see how time actually changes the taste, aroma, and texture.
