Adapted from Annie Fisher
4 cups all-purpose flour
1/3 cup butter
1/3 lard
1 cup water
1 tablespoon sugar
2 teaspoons salt
Combine flour, salt, butter and lard. Cut the fat into the flour until it basically disappears. Dissolve the sugar in the water and then work the water into the flour mixture.
Beat the dough per the video, folding it over on itself every time you get it flattened, for a LONG time — until you see it lightening and you see blistering on the surface. Mine took 45 min.
Roll it 1/2 inch thick, cut out the biscuits, dock them, bake them for an hour at 325ºF, don’t blame me if they don’t taste good — I’m not Annie Fisher.
