Persian Buns are a fried cinnamon roll with frosting on top. Kind of like a donut. Two towns 1,000 miles apart claim it as their own. They are similar, but really are two completely different pastries. One vanished when the bakery closed its doors. The other is still made, but the recipe is kept as a trade secret. I set out to recreate both from scratch…and learned a few things the hard way.
This is a full baking tutorial with step-by-step instructions for a recreation of both confections…The long lost Camden, Maine version with its rich fudgy chocolate-topped frosting, and the closely guarded Thunder Bay, Ontario berry glazed classic. No box mixes. No shortcuts. Just real ingredients and a little detective work with some new friends.
