Ladi pav is a fixture of Mumbai’s food culture. But recently, city authorities have demanded that bakers switch from traditional wood-fired ovens to gas or electric.

Bakers say that the pav baked like this is expensive, and the main sources of Mumbai’s pollution are vehicles and the dust emitted from construction all over the city. So why target the staple food of the working class?
