From Food Wishes.

Agnolotti are my favorite stuffed pasta shape, and while you can fill them with anything, they really shine when stuffed with a simple ricotta and parmesan filling. They feature the perfect filling-to-pasta ratio, and are much easier to make than ravioli. These gorgeous cheese pillows are a pleasure to make, and a delight to eat. Serve them in the pasta sauce of your choice. Enjoy!
