INGREDIENTS
6 ounces cha lua (Vietnamese pork)
6 ounces pate
6 ounces Vietnamese butter
6 ounces cha chien (Vietnamese pork protein) (can replace with sliced tofu, tempeh)
2 cucumbers
2 jalapeños
1 cup Vietnamese pickled carrots
½ cup torn fresh cilantro
4 bánh mì baguettes, sliced into 1-inch pieces
PREPARATION
Slice your cha lua into ¼-inch pieces, and arrange them neatly on a large board in an S shape. Place your pate and butter in 2 separate ramekins. Position the ramekins between the corners of the S shape, then fill in gaps with the cha chien. Peel and slice the cucumbers to match the shape of the cha lua. Thinly slice the jalapeños. Assemble neatly on the board. Fill in the gaps with the pickled carrots and cilantro. Place the bánh mì pieces on a separate plate. Serve, encouraging guests to build their own mini bánh mì bites — layering pate, butter, meat, pickles, and herbs on baguette slices. Enjoy!
