She explains to Julia Collin Davison that by using toasted challah cubes you can ensure each bite soaks up the maximum amount of custard, while using the rendered apple cooking liquid as part of the custard doubles up on apple flavor. Finished with a strussel-like topping and a scoop of ice cream, it will taste like you’re biting into the best part of an apple pie.
