Get more recipes from @theboldappetite 1 large broccoli head (or 2 medium) 2 tbsp olive oil 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp paprika (smoked or sweet) ¼ to ½ tsp red chili flakes, to taste 2 1/2 oz freshly grated Parmesan cheese Kosher salt, to taste Preheat the oven to 400°F. Bring a large pot of salted water to a boil. Prep the broccoli by cutting away the larger base, then separating the florets into manageable pieces. Once the water is boiling, drop the broccoli in, and cook for 3–4 minutes, until you can pierce it with a fork but it’s not yet fork-tender. Drain thoroughly, and pat dry. In a bowl, stir together the olive oil and the spices. Line a half-sheet pan with parchment paper. Spread the Parmesan cheese over the parchment in a thin, even layer, then arrange the broccoli on top. Smash the broccoli down with the bottom of a cup. Brush the broccoli with the seasoned oil, and sprinkle a heavy pinch of salt. Roast at 400°F for 25–30 minutes, until the cheese is golden brown and the broccoli is crisp. Remove from the oven, and let cool for 5 minutes before breaking it up.
