1 teaspoon instant yeast
30g sugar
125g butter, chilled

¼ cup unsweetened cocoa powder (0.70 oz / 21g)
¾ teaspoon Diamond Crystal kosher salt
1 cup heavy cream (8.5 oz / 240g), at room temperature
2 tablespoons light corn syrup
3 ounces (85g) bittersweet chocolate, preferably 70%-72% cacao, chopped
2 tablespoons unsalted butter
2 teaspoons vanilla extract
