But I Love Penne alla Vodka More Ingredients: ¼ lb pancetta, chopped 1 shallot, chopped 1 tsp crushed red pepper 1 tbsp tomato paste ¼ cup vodka 1 28 oz can crushed tomatoes ½ lb penne ½ cup heavy cream ¼ cup parmesan cheese 4 basil leaves Directions: 1. Fry pancetta in a pan on medium heat until golden brown. Remove and set aside. 2. Add the shallots and saute until soft. Stir in the crushed red pepper and tomato paste. Saute for 3 more minutes. 3. Pour in the vodka and simmer until the sauce thickens. Then add the crushed tomatoes and bring to a simmer. Season with salt. 4. Boil the pasta. 5. Simmer the sauce for 20 minutes. Then add the heavy creamy and parmesan cheese. Stir in the basil leaves and the pancetta. Add your cooked pasta and serve.
